The humble sweet potato. Not much to look at, but the source of so many amazing recipes.
Sweet potato is a great source of vitamin A and vitamin C, and because of its starchy qualities is extremely filling. Our mouth-watering recipe for sweet potato and cumin soup will leave you feeling healthily satisfied.
1 leek (diced and washed)
2 sweet potatoes (peeled and chopped)
4 gloves garlic
2cm of fresh ginger
1 tsp cumin
50g of red lentils
1 pint of vegetable stock (use vegetable juice from steaming or 3 veg stock cubes)
Fry the onion, garlic and ginger in 1 tbsp olive oil for 5 minutes.
Add the leek and sweet potato and fry for another 5 minutes.
Add the stock, red lentils and cumin and simmer for 25 minutes.
Blend all of the ingredients with a hand blender, until almost smooth.
