Day 2Welcome back for day two of the Northern Bootcamp Twelve Days of Fitmas – good for you, you’re back for more!

Exercise

Today we focus on legs, completing the first of three leg routines in the 12 day workout plan.

Leg LiftsDay Two Routine: Legs I, Chair lifts

  • Chair leg lifts, 2 sets of 10 per leg

Find a stable chair and plenty of space. Standing behind the chair, hinge over forward so that your back is flat. You’ll want to try to keep your upper body in this position while completing the exercise.

Bend your left leg while lifting your right leg behind you. Point your toe, and lift the right leg until it is parallel with the floor. Repeat with the same leg 10 times and then do the same on the left.

Repeat the same 10 sets on each leg- this time, with your lifting foot flexed.

Not hard enough for you? Use ankle weights or increase reps until you feel some burn.

Red and White Confetti Salad

Ingredients:

For the salad

600g romaine hearts, sliced

2 heads Belgian endive, cored & sliced

1 fennel bulb, trimmed, cored, quartered and thinly sliced

1 can (410g) hearts of palm, drained, thinly sliced

1/2 head radicchio, cored, quartered and thinly sliced

1 red apple, cored and cut into matchsticks

150g thinly sliced radishes

Freshly ground pepper to taste

For the Champagne Vinaigrette Dressing

1 shallot, peeled and quartered

55ml champagne vinegar

55ml extra-virgin olive oil

45ml Dijon mustard

15g salt

Freshly ground pepper to taste

Method:

Toss the romaine, endive, fennel, hearts of palm, radicchio, apple and radishes together in a large salad bowl.

Combine shallot, vinegar, oil, mustard, salt and pepper in a blender to make dressing. Puree until smooth and creamy.

Just before serving, add your champagne vinaigrette to the veg and toss to coat.

Season with pepper as desired.
