The last in our series of seven boot camp soups in seven days is a perfect way to use up those left-over tomatoes. This tomato and chicken soup recipe is great, full of vitamins and protein.

Ingredients
1 onion, finely chopped
2 carrots, grated
2 lean back bacon rashers (all fat removed), chopped
2 large skinless and boneless chicken breasts, cooked and cut into small pieces
600g chopped tomatoes
400ml chicken stock
1 tbsp chopped rosemary
Zest and juice of 1 lemon
Salt and ground black pepper
Method
Put the onion, carrots and bacon in a large saucepan, fry for 2 minutes
Add the chicken pieces, tomatoes, stock, rosemary and lemon zest and juice
Bring to the boil and stir
Cover and simmer for 15 minutes on a medium heat, stirring occasionally
Season with salt and ground black pepper
