To follow Annie’s wonderful recipe!
Boil 3 lemons for 30 to 60 mins till they are soft and discard water and pips from lemons.
Put in all of the lemon including rind into a food processor.
300 grams ground almonds
160 grams honey
2 tablespoons rapeseed oil
1 teaspoon of lemon essence
Blitz the lot and put in a tin lined with non stick paper and bake at 170 about 20 -30 mins .
Makes approx 30 pieces as per the photo!
